1. Firstly, soak the sago in water for 6 to 8 hours. Keep in mind that the sago should not be too hard or too wet. Drain the water from the sago completely.

2. In a bowl, add soaked sago, boiled and mashed potatoes, roasted peanuts, green chillies, ginger paste, cumin seeds, rock salt and coriander leaves. Mix all the ingredients well so that a thick mixture is formed.

3. Shape fries: Divide the mixture into small portions and shape them into long, thin fries. If you want, you can also make round shaped tikkis, but the potato chip shape is more attractive and fun to eat.

4. Heat the oil in a frying pan. Keep the oil on medium heat so that the fries cook well inside. Put the prepared French fries in hot oil and fry them until golden and crispy. As you flip, be careful not to break the fries.

5. When the fries are golden and crispy, take them out and keep them on tissue paper to absorb excess oil. Your Sabudana fries are ready. Serve them hot with coriander and mint chutney or curd on an empty stomach.
