5 foolproof tips for using homemade seviyan in your favorite dishes

Vermicelli, also known as seviyan, is a key ingredient in many Indian sweet and savoury dishes. While it is easy to find different packaged brands in shops these days, many families still make fresh, homemade seviyan, especially during festivals. They are cleaner and fresher, and there is no chance of anything foreign being mixed in. Traditionally, they are made from refined flour, but if you are looking for a healthier option, you can use semolina or wheat flour. You can make it by hand or with a machine. And guess what? It is very easy to make and store at home. So, let’s get started!

How to make homemade noodles (Seviyan):

1. Let’s start with the dough

First, put a cup of maida (flour) in a bowl. Then, slowly add water and knead it into a dough. It should be just right, not too hard and not too soft. And no, you don’t need oil or salt. Just water is enough.

2. Do not abuse water

Be careful with the water – you don’t want to add too much. Add it in small amounts and mix it well. If the dough gets too wet, you’ll have a hard time making those perfect seviyan strands because they will stick to your hands.

3. Let it rest

After kneading, let the dough rest for at least 30 minutes. This helps the dough become more elastic and easier to work with.

4. Dry in the sun

Drying the seviyan is very important. If any moisture remains, it may spoil when stored. Make sure you dry them in the sun properly before storing them.

How to shape noodles (Seviyan)

Take a small piece of dough and roll it between your palms to form thin, noodle-like strips. Once you have the strip, hold one end between two fingers and tear it into small, thin pieces with your other hand. Spread these small pieces out on a plate or paper to dry. Repeat the procedure with the rest of the dough.

Let the pieces dry in the sun for 4-5 hours. Once they are completely dry, store them in an airtight container. Now, whenever you are craving something tasty, simply roast them and make your favorite noodle dish with noodles.
