Chef Stephanie Bonnin prepares Colombian-style steak and potatoes

We commissioned Chef Stephanie Bonnin, owner of a restaurant based in Brooklyn, New York, The Tropi KitchenWith the combination of a steak with a michelada, the result is a Colombian-style steak and potatoes. Inspired by the roots of his native South America, Bonnin sears his T-bone or “Flintstones steak,” and serves it with avocado sauce and creole potatoes.

First, he advises letting the steak air dry for 24 hours beforehand, and before cooking, covering it with a generous amount of salt. Next, pour a drizzle of oil into a cast iron pan and let it heat up thoroughly, browning the meat for 3-5 minutes on each side. After flipping it, add a tablespoon of ghee and a few cloves of garlic, pouring the juices over the meat. Once the steak is nicely browned, finish cooking it in the oven.

Next, he moves on to potatoes. “Patas criollas are very important to Colombian identity,” he explains. “The potatoes come from South America, from the Andes, but you can get them frozen in many Latin American retail stores here.” He spreads the small yellow potatoes on a baking sheet lined with baking paper, covers them with olive oil and salt, and cooks them in the oven.

Next, she softens the ghee in the cast iron pan and adds the potatoes for extra color and texture. “They have a very buttery flavor,” she explains. “Once you try them, there’s no turning back.”

Finally, she moves on to the avocado salsa, which she says has no recipe. In a blender, she combines onions, cilantro, lots of lime juice, some serrano chiles, garlic, olive oil, salt and frozen avocados. “I’m Latina, so all we do is garlic, onions, chiles — that’s our flavor,” she says.

To serve, slice the steak close to the bone to ensure the meat is rested but still red. Sprinkle Maldon sea salt on top and garnish the avocado with cilantro. “This pairs well with the summery flavors of the tomato and lime juice in the michelada,” she says. “You can also taste a little bit of the flavor of Colombia.”
