This tender and juicy cranberry salmon recipe features a homemade mustard-ginger sauce that is brushed over the cooked salmon fillets and briefly broiled. The sauce can be made well in advance, making this an extremely quick dish to prepare. It’s perfect for busy weeknights when you’re looking for a quick yet healthy and delicious meal!
A while back, I found an amazing deal on fresh blueberries at a roadside produce stand: 2-pound bags for $2. Our family is all avid smoothie drinkers, and since we’re such berry fanatics, I bought 15 bags. I took them home and stuck them in the freezer.
With 30 pounds of blueberries I set to work creating some dishes with this theme and making my own sauces and condiments to can. Here is an example, a dish I made for dinner. You will love how incredibly easy and delicious it is!
Salmon with blueberries recipe
This cranberry salmon is prepared by cooking it, coating it with my homemade cranberry ginger sauce, and then briefly roasting it in the oven. Salmon can be cooked using any method you prefer: pan-seared, grilled, baked, or sous vide. In the photos below, I’m preparing sous vide salmon, something I was experimenting with at the time to create an ultra-moist and delicate salmon. In the recipe card below, I’ve provided instructions for different methods of preparing salmon.
Whichever cooking method you use, place the cooked salmon fillets on a lightly greased baking sheet.
Set the oven to broil mode.
We are going to use this delicious Ginger and cranberry sauce which can be prepared several days in advance, making it an ultra-quick meal to prepare.
Generously drizzle some of the cranberry ginger sauce over each salmon fillet.
Grill the fillets in a preheated oven for about a minute. Don’t overcook them or the salmon will dry out.
Your tender and delicious salmon with blueberries is ready.
Serve the cranberry salmon with steamed jasmine, basmati or wild rice and vegetables of your choice.
