Corn is an incredibly versatile food that can be prepared in a variety of ways. You can grind it into flour and make fresh, hot roti, or cook it as a tasty side dish to accompany meats and poultry.

However, this post is dedicated to chaat lovers, those who enjoy the sour, salty, sweet and tangy flavors of herbs and spices. Let’s get cracking and prepare the most delicious chaat of the year!

Corn masala chaat

Ingredients

2 cups corn kernelsGarlicGingerBay leaf¼ teaspoon black peppercorns1 teaspoon butterTomatoOnionFresh coriander leavesSpring onion¼ teaspoon Chaat Masala¼ teaspoon cumin powder¼ teaspoon red chilli powder¼ teaspoon rock salt¼ teaspoon black pepper powder2 green chillies2 tablespoons lemon juice

Method

  • In boiling water, add chopped ginger, garlic, black peppercorns, a bay leaf and a pinch of salt for seasoning. Measure the ingredients to your liking and, once the water has become fragrant, add the corn kernels. Allow the corn to cook until tender.
  • Once fully cooked, drain the water and transfer the sweet corn kernels to a bowl.
  • Add butter to taste, mixing it well with the hot corn and set aside.
  • Next, combine the chopped vegetables with the sweet corn kernels.
  • Season with spices, salt, lemon juice and fresh coriander. Mix well and your best corn chaat is ready to serve.

Lal Mirch Corn Chaat

Ingredients

2 cups sweet corn kernels1 teaspoon butter¼ teaspoon lal mirch powder¼ teaspoon cumin powder2 tablespoons lemon juice¾ teaspoon chaat masala¼ teaspoon salt to taste

Method

  • Boil 2 cups of sweet corn kernels in water for 3-5 minutes.
  • Drain the beans and transfer them to a bowl.
  • Add 1 teaspoon of butter and toast the beans over medium heat until they become aromatic and flavorful.
  • Once it is well cooked, we put it in a bowl and let it rest for 5 minutes.
  • Season the buttered corn kernels with ¼ tablespoon chili powder, ¾ tablespoon chaat masala, ¼ teaspoon cumin powder, ¼ tablespoon salt and 2 tablespoons lemon juice.
  • Mix everything well and serve when cool.

Italian style corn chaat

Ingredients

2 cups sweet corn kernels½ cup chopped onions1 cup diced green peppers2 tablespoons tomato sauce1 teaspoon Italian seasoning½ teaspoon salt

Method

  • Add 2 cups cooked baby corn kernels and 2 tablespoons salted butter to a skillet.
  • Cover and cook over medium heat for 4-5 minutes.
  • Stir a few times while cooking.
  • Sprinkle 1 teaspoon red pepper flakes on top and serve hot.

However, prepared sweet corn brings out its best flavor when mixed with butter, salt, herbs and spices.
