Recently, an actress named Sharayu Mahale took to Instagram to share her contribution to this trend, which she gave an Indian twist to. More specifically, she wanted to highlight a Maharashtrian cucumber salad called Koshimbir. She started the video by saying, “For everyone watching the cucumber frenzy that is taking over this summer, my big question is how come ‘Koshimbir’ is not part of the mix yet?” The initial part of the video shows screenshots of some of Logan’s most popular cucumber videos. Sharayu proceeds to prepare the Maharashtrian delicacy from scratch and details an easy recipe in Marathi. She has also provided English subtitles.

Start by washing the cucumber and cutting it into small pieces (without peeling). Add them to a bowl and cover with a cup of yogurt. Since I didn’t have any green chilis at home, I used jalapeños to give the salad a spicy touch. Grind a handful of peanuts in a mortar and add them to the salad bowl. Then add sugar and salt to taste.

In a pan, she made a simple tadka of mustard seeds in ghee. She added the jalapeno pieces, mixed them well, and then poured the tadka over the rest of the ingredients in the salad bowl. Her version ended up being very spicy, but she balanced it out by seasoning the salad with varan bhaat (rice with dal/lentils). Don’t miss her quirky and funny comments as she prepares the dish.
