– 1 cup semolina (rava/semolina)

– 1 cup of curd (yogurt)

– 1 inch grated ginger

– 1-2 green chilies, finely chopped

– ½ teaspoon mustard seeds

– ½ teaspoon of baking soda or 1 packet of eno

– Salt to taste

– 1 tablespoon of oil

– Fresh cilantro leaves, chopped (optional)

Step 1: Prepare the solution

1. Wash the moong dal thoroughly and soak it in water for 2-3 hours.

2. Drain the water and grind the soaked moong dal with a little water in a blender until you get a smooth paste.

3. Mix the moong dal paste, semolina, curd and salt in a large bowl. Mix well to make a thick and smooth batter. Leave it for 10-15 minutes.

Step 2: Tadka

1. Heat the oil in a small pan. Add the mustard seeds and let them crackle.

2. Add chopped green chillies and grated ginger to the pan. Fry for a minute and switch off the flame.

3. Add this mixture to the dough and mix well.

Step 3: Add baking soda

1. Just before steaming, add baking soda or Eno to the batter and mix gently. This will make the idli soft and fluffy.

Step 4: Steam the Idli

1. Apply some oil on the idli moulds and pour the batter into each mould.

2. Place the moulds in a steamer and steam the idlis on medium heat for 12-15 minutes or until fully cooked.

3. Check with a toothpick whether they are cooked or not. If it comes out clean, your idli is ready.

Step 5: Serve

1. Remove the idlis from the moulds and serve hot with coconut chutney, sambar or spicy tomato chutney.
