Instructions

  • Grease a medium saucepan (I used a 10-inch round saucepan). Preheat oven to 400 degrees.

  • Cut the cookies into quarters. Place half of the cookie quarters in the bottom of the greased casserole dish. Bake for 10 minutes.

  • While the biscuits are baking, prepare the sausage and gravy. In a large skillet, brown sausage over medium-high heat until cooked through. Sprinkle with flour and stir for 3-5 minutes until the sausage absorbs the flour. Add the milk, salt and pepper and stir until the mixture boils. Taste, adding salt or pepper as needed to taste. (Add a little milk to thin the sauce if it is too thick at this point; it should be runny and not too thick)

  • Pour sausage gravy over baked biscuits. Top with the remaining raw cookie quarters and bake for an additional 20 to 25 minutes until the top layer of cookies is golden and flaky. Serve immediately.

Grades

Milk: Whole or fat-free half and half work well.
Feeding a crowd: You can easily double this recipe and bake it in a 9×13 pan.
