How to make Mexican chicken and rice with cheese

This dish is very easy to prepare and only requires a few ingredients. Cut the chicken into bite-sized pieces and season with taco seasoning. Heat the oil in a large skillet over medium-high heat. Add the chicken to the pan and cook until golden brown. Remove the chicken from the pan.

Add rice, chicken broth, black beans, corn, taco seasoning, and salsa verde to the pan. Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until rice is tender and liquid is absorbed.

  • 1 -lb boneless, skinless chicken breasts
  • 1 Tablespoon taco seasoning
  • 1 Tablespoon olive oil
  • 1 (11 ounces) Can you Mexicorn? exhausted
  • 1 (15 ounces) Can black beans? drained and rinsed
  • 2 cups instant white rice
  • 2 cups low sodium chicken broth
  • 1 ½ cups green sauce
  • 1 cup blend of grated Mexican cheeses
  • 2 Tbps chopped fresh cilantro
  • Cut the chicken into bite-sized pieces and season with taco seasoning. Heat the oil in a large skillet over medium-high heat. Add the chicken to the pan and cook for 5 to 6 minutes, until browned. Remove the chicken from the pan.
