When it comes to Indian food, sometimes the boundaries blur. Dishes with shared histories make their way to neighbouring states and are adapted and fine-tuned to local flavours. One such dish is chiroti or chirote, which while some say is from Maharashtra, others claim it is a creation of Karnataka, though it is now safe to say that both love it equally. It is also well known in certain parts of Telangana, particularly in Nalgonda district, where it is called pheni or peni.

Chiroti in Karnataka and Chirote in Maharashtra, this unleavened flaky pastry is a decadent dessert. In Karnataka, no wedding is complete without Chiroti, which is typically served with almond milk (Badami Halu). In Maharashtra, it is prepared as one of the Pancha-Pakwanna (five sweets) for festivals. Made from maida, the dough is rolled out into layered circular shapes and fried in ghee or refined oil. The result is a fluffy, golden poori, dusted with powdered sugar and optionally garnished with grated almonds and cashews, served with sweetened milk.

halu’s dream Recipe

Ingredients

  • 2 cups Chiroti Rava (Semolina/Suji), fine
  • 2 tablespoons softened butter
  • ¾ cup water
  • ¼ cup Maida (plain flour), for dusting

For Saati (butter) Rice flour paste)

  • ¼ cup softened butter
  • 2 tablespoons of rice flour

Method

  • In a large bowl, add 2 cups of chiroti rava and 2 tablespoons of softened butter. Crumble and mix well to ensure the rava remains moist.
  • Gradually add ¾ cup water and begin kneading the dough. Knead for 5 to 8 minutes until the dough is soft and smooth.
  • Continue kneading, adding water only if necessary, until the dough is well formed. Let the dough rest for 15 minutes to allow the rava to absorb the moisture.
  • Take a large ball-sized portion of dough and sprinkle it with maida. Roll it out as thin as possible and sprinkle with maida if required.
  • Prepare the saati by mixing 1 teaspoon of butter and rice flour, then spread it evenly over the rolled out dough. Repeat this process 5 times, layering saati each time.
  • Roll the dough tightly into a log, then cut into 1-inch pieces and press gently.
  • Fry the chiroti in oil over medium heat until golden. Drain and let sit for 10 minutes to allow the oil to drain completely.
  • To serve, mash the chiroti on a plate, sprinkle with powdered sugar and top with warm almond milk (Badam Halu).
