Kakoda for weight loss

Required materials

  • 250 grams of pumpkin
  • 1 large onion, finely chopped
  • 2-3 green chilies, chopped
  • 1 large tomato, chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon red chili powder (to taste)
  • 1 teaspoon garam masala
  • 1/2 teaspoon mango powder for flavor
  • salt to taste
  • 2 tablespoons mustard oil or any oil of your choice
  • fresh cilantro leaves for garnish

Step by step recipe: Kakoda Ki Sabzi recipe

  • First, wash the cucumber well. Cut it into thin, round pieces.
  • Heat water in a saucepan, add a pinch of salt and boil the Kakoda for about 5 minutes. This process helps remove the bitterness of the vegetable. Drain the water and keep the cucumber pieces aside.
  • In a kadhai or deep pan, heat 2 tbsp mustard oil until it starts smoking slightly. Mustard oil enhances the flavour, but you can use any cooking oil.
  • Add the cumin seeds and let them crackle. Add the finely chopped onion and chopped green chillies. Fry the onion until it turns golden brown.
  • Add turmeric powder, coriander powder, red chilli powder and salt. Mix all the spices well.
  • Add the boiled Kakoda pieces to the spice mixture and mix well so that they get evenly coated with the spices.
  • Cover the pan with a lid and let the Kakoda simmer for about 10-12 minutes. Keep stirring occasionally to prevent sticking. The vegetable should soften and absorb the flavour of the spices.
  • When the Kakoda is almost cooked, add the chopped tomatoes and cook until they soften and blend with the vegetables.
  • Sprinkle garam masala and dry mango powder to enhance the flavour.
  • Cook for 2-3 more minutes and turn off the heat.
  • Garnish the Kakoda curry with freshly chopped coriander leaves to make it even more refreshing.
  • Serve hot with chapatti, paratha or rice. This light and flavourful dish goes well with a variety of Indian rotis and also as a side dish with dal and rice.
