  • Ghee: 1/4 cup (cold)
  • Milk: 1/4 cup
  • Water: 1 to 1.5 cups (cold)
  • Ice cubes: 4-5 pieces
  • Lemon juice: 1 teaspoon
  • Yellow food coloring – a pinch (optional)
  • ghee or oil for frying

For the sugar syrup:

  • Sugar: 1 cup
  • Water: 1/2 cup –
  • Saffron threads: a few (optional)
  • Cardamom powder: 1/4 teaspoon

  • Chopped nuts (almonds, pistachios): 2-3 tablespoons
  • Silver Leaf (Vark): Optional

Instruction

1. Add chilled ghee and a few ice cubes to a large bowl. Whisk the ghee until creamy and white.

2. Gradually add the flour to the ghee and mix until it thickens and resembles breadcrumbs.

3. Gradually add the cold milk and water, whisking continuously to obtain a smooth, lump-free batter.

4. Add lemon juice and a pinch of yellow food coloring. Mix well. Keep the dough for 15-20 minutes.

2. Add the saffron threads and cardamom powder. Stir well and keep the syrup warm.

Frying Ghevar

2. Pour a ladle of batter into the hot ghee. It will crackle and form a honeycomb-like pattern.

3. Once the edges start to brown, use a skewer to make a hole in the center. Fry until golden and crispy. Remove and place on a wire rack.
