Prepare and bake stuffing mix according to package directions.

Bring the chicken broth to a boil in a large pot with a lid. Add the chicken breasts and reduce the heat to medium-low, cooking with the lid on for 20-25 minutes until the chicken is cooked through. If the broth does not completely cover the chicken, cover it with water.

Shred the chicken on a cutting board using two forks. Pour off the broth from the pan and return the chicken along with the sour cream, garlic powder, onion powder and some salt and pepper to taste. Stir gently over medium-low heat to warm through.

Meanwhile, toast the brioche.

Divide the creamy shredded chicken between the buns and top with the shredded filling. Serve immediately.
